1 1/8 cups warm water
1 1/2 teaspoons yeast
1 1/2 teaspoons white sugar
3 cups of white all-purpose flour
1 teaspoon salt
1/2 tablespoon vegetable oil
Mix sugar, water and yeast together and let it sit for 10 minutes until it’s nice and foamy.
Add the vegetable oil to the water mixture.
Mix flour and salt, and then add the wet ingredients to this mixture.
Knead this for 5 minutes on a floured surface.
Then roll the dough out into a long cylinder approximately 12 inches long, and cut it into 8 equal pieces.
Take each piece and roll it into a ball.
Next, using a rolling pin, flatten the ball until it forms a circle approximately 6-7 inches in diameter.
Let these flattened balls sit for 30 minutes.
Preheat your oven to 500 degrees farenheit.
When the flattened pitas have finished their sitting time, place them on a wire rack and put them in the oven for about three minutes, or until they have puffed up and turned a little bit brown.
After you take them out of the oven, allow them to sit and cover them with a damp cloth. This will soften them.
Store them in a plastic bag in the fridge or in the freezer. In the fridge, they will last about a week.
Great for sandwiches, or cut them into slices and dip them in hummus!
